Tapenade

Tapenade
is a French olive paste flavoured with anchovies, herbs and extra virgin olive oil and other delicate flavours such as capers and garlic.

The French claim the fame for inventing it but any Italian will tell you otherwise. Some say it was the place where the ‘Ladies of the Night’ congregated to sample fine faire.  It is used in France as a topping on fish dishes but its uses are limitless.

The Macedon Grove Black Tapenade
won first prize at the Royal Canberra Show in 2003 and was judged the champion olive exhibit, so you know you are tasting the best that money can buy!

 


Try it out on the following:

Topping on grilled fish or meat
Grill your fish or meat on the grill or barbie, in foil. Add a dollop of Tapenade on top, seal the foil. Grill slowly to let the flavour infuse.Our green tapenade will give a stronger herb flavour and goes great with tuna. For a more traditional flavour try the black tapenade.

On Brushetta’s or as a  Dip or spread 
Spread on your bruschetta and make it that little bit special! If you want something simpler simply use on toast or bread.
The black tapenade is great as a pre dinner dip or spread. Try on dried biscuits or on salad vegetables.

Green tapenade goes great also as an after dinner spread and goes well with cheese.

If the kids like it put it on sandwiches for their lunchbox. It’s a great healthy alternative to fatty meat spreads.

In Salads
Add one or two teaspoonfuls before you toss the salad. Add some good quality Australian extra virgin olive oil and taste the extra flavour it adds to the meal.

Rissotto’s and Pasta
A leading olive oil expert in Australia and a ‘very real Italian’ by birth swears that our black tapenade makes the best rissotto he has tasted in years! You will probably need to use the whole jar but we promise you will not be disappointed!

Add to your favourite pasta. Blend through a spoonful or two to cooked pasta add your sauce and lightly dress with good quality Parmesan cheese.

There really is no limit to the use of Tapenade!
